I've been told that squash and cucumber vines can can be arranged to climb a trellis and still bear produce. Have you seen that? Does it work well?

Yes, I have only ever grown cukes up a trellis as they are so susceptible to powdery mildew in my Subtropical Climate. I've also grown zucchinis vertically with great success. Squash can also be grown up a stake. All these curcubits (cousins in the squash family) need good airflow and are very heavy feeders so soil prep is vital for a high yield. ๐Ÿฅ’๐Ÿฅ’๐Ÿฅ’ Hope this helps. ๐Ÿ™‚
